This week ended up being a little better - we actually enjoyed a few meals at home! That was really nice. I was kinda lazy last week - mostly I blame it on pregnancy. :D Some days by the time it gets around to fixing dinner I'm too tired and don't want to cook so I don't. *sigh* Somehow I have to combat that late afternoon tiredness so I don't get into a bad habit ...
Anyway, here is the planned menu coarse this week. We'll see how this goes . . . it's going to be a busy week!


Monday: Italian Pasta with tomato and basil

Tuesday: Mexican Chicken Skillet

Wednesday: Spaghetti

Thursday: Carnitas Soft Tacos

Friday: Leftover Smorgasbord

Saturday: Muffins and Eggs

Sunday: BLT Salad

Other goodies I plan to make this week:
Lemon Bread
Cupcakes {for baby shower on Saturday}
Some other kind of bread . . .
Freezer-to-Skillet Cheeseburger Pasta

Last week ended up being really crazy. DH worked insane hours & I honestly had some afternoons/evenings where I just didn't feel well. Top that off with Valentine's Day and we just didn't get to very many of our meals on the menu from last week. But that's okay. More for this week! ;)

Monday: Ranch Chicken

Tuesday: Leftover Smorgasbord {changin' things up a bit this week}

Wednesday: Cheesy Stuffed Shells

Thursday: Bean and Spinach Burritos with Avocado Relish

Friday: Chicken Corn Chowder

Saturday: Swedish Pancakes {recipe coming this week!}

Sunday: Hawaiian Ham

Other goodies I plan to make this week:
Wheat Bread - I really am going to make this ... I keep putting it off, which is just a miserable way of saying that I don't want to make bread ... this is just silly, really, because I know I'll feel better about myself as soon as I do it ... I just gotta do it.

Menu Plan Series - Part VII

First of all, I'd like to apologize for being MIA for the last while. My reasoning is that I spent pretty much all of December feeling super sick and the last thing I was thinking about was food. {You can find the reason I was sick here and here.} Anyway, I am finally back on track I think. I'm creating my menus again & I finally have a menu & shopping list for you! Actually, the 20-day menu I'm going to share is the same 20-day menu I'm using this month. I'll try to hyperlink the recipes if I've already posted them or if they can be found elsewhere, but if not then I'll post the recipe here as soon as I make it this month. Thanks for understanding about that. Also, tomorrow I'm going to post the shopping list {I promise!} for this menu so you can know what you'll need for the whole month. So here you go with a 20-day menu.

I know I missed a week. Last week I came down with something weird {I know it wasn't the flu - I think it was some weird cold or something} and I just didn't much feel like doing anything. Many things were sadly neglected, including my menu planning! But I'm back on track now.
Meal Highlight {from last menu}: Tuna Casserole. As I said, I was going to try to come up with something a little on my own and DH & I were both pleasantly surprised at how "un-fishy" the casserole tasted. I'm sure we'll have it again!

Monday: Swedish Pancakes

Tuesday: Minestrone Soup {I'm craving it!!}

Wednesday: Mac ‘n Cheese

Thursday: Leftover Smorgasbord
